The Cellar
Wine has always been at the center of the concept of conviviality and sharing, a fundamental element with which to accompany not only dishes, but also moments of reflection. Fattoria delle Torri has always been attentive to Italian and international wine culture, which is shown in all its splendor in the restaurant’s cellar. In this small space created over the years by Chef Barone, we find many gems and historic bottles which, under the careful supervision of Carla our sommelier, are accompanied by new labels and young wineries that aim to rediscover the territories and those winemaking traditions disappeared over the years. Not only wine, but also technology; thanks to CoravinĀ®, in fact, we can offer a selection of vintage wines by the glass. This tool has the ability to serve a glass of wine without having to open the bottle; through a needle we have the possibility of introducing an inert gas (Argon) inside the bottle, which allows the wine not to oxidize and therefore not deteriorate, and at the same time to serve a glass of wine from the same bottle as if it were just been uncorked.
